Egg in the Nest

What you need:

  • one piece of bread (whichever kind you prefer)
  • one egg
  • some butter/margarine

This is honestly one of the simplest dishes to make. Plus it doesn’t take long so it’s very convenient.

What to do:

Put some butter or margarine in a frying pan on a stove. Set the burner on a little more than medium. Let that melt. Butter both sides of your piece of bread. Cut a hole in the center of the bread. It shouldn’t be huge, just large enough to hold an egg yolk. Then put the buttered bread in the frying pan. Next, crack the egg in the center of the piece of bread so the yolk is in the center. Let that sit until the bottom of the bread is golden brown (it takes about a minute or two) then flip it. Once the other side is sufficiently cooked (again, another minute or two) then it’s ready to eat.

This is a dish my grandmother used to make for me everyday I visited her. Once she taught me the rest is history :3 You could eat it for any meal of the day, of course, but it’s typically a breakfast food. Oh, and it’s pretty filling by itself but some bacon and juice are the perfect sides to this dish.

Red Velvet Whoopie Pies
Difficulty: ★★★★☆ (Hard)
Yield: 20
Ingredients:
Cookies:
2 cups all-purpose flour
2 tablespoons natural cocoa powder
1/2 teaspoon baking powder
1/4 teaspoon salt
8 tablespoons (1 stick) unsalted butter, at room temperature
1 cup packed light brown sugar
1 large egg, at room temperature
1 teaspoon vanilla extract
1/2 cup buttermilk, at room temperature
red food coloring 
Frosting:
8 oz. cream cheese, softened
5 tablespoons unsalted butter, at room temperature
2 teaspoons vanilla extract
2 1/2 cups confectioners’ sugar, sifted
Directions:
Preheat oven to 375 F.  Line two baking sheets with parchment paper.
In a medium bowl sift the flour, cocoa powder, baking soda, and salt together. In the bowl of a stand mixer fitted with the paddle attachment, cream the butter and sugar on medium speed until light and fluffy, about 3 minutes. Scrape down the sides of the bowl, then add the egg and vanilla, beating to combine. With the mixer on low speed, alternately add flour mixture and buttermilk, beginning and ending with the flour mixture, beating just until incorporated. Add the food coloring a little at a time until you achieve your desired color for the whoopie pies.
Pipe (or spoon) batter in 1-inch rounds, about 1/2-inch high on prepared baking sheets, leaving about 1 inch of space between each round. (Alternatively, you can pipe heart-shaped cookies - see Annie’s photos and instructions linked above.) Bake 7-9 minutes, or until the tops of the cookies are set. Cool the cookies on the baking sheets for a few minutes then transfer to wire racks to cool completely. 
To make the cream cheese frosting, in the bowl of a stand mixer fitted with the paddle attachment beat the cream cheese and butter on medium-high speed until well combined and smooth, about 2-3 minutes. Add the vanilla extract and mix to combine. Gradually add the confectioners’ sugar, stopping to scrape the sides of the bowl occasionally. When all of the sugar has been incorporated, increase the speed of the mixer and beat briefly until smooth. 
Match the cookies by size as best you can to make pairs. Pipe the frosting on the flat side of one of the cookies in each pair. Sandwich the cookies together and press gently until the filling reaches the edges.

Winter sore throat “tea”- In a jar combine lemon slices, organic honey and sliced ginger. Close jar and put it in the fridge, it will form into a “jelly”. To serve- spoon jelly into mug and pour boiling water over it. Store in fridge 2-3 months.

  • 1 teaspoon Chinese five spice
  • 1/2 teaspoon salt
  • 1/2 cup walnut pieces, chopped
  • 1 cup sliced strawberries
  • 1/3 cup semi-sweet chocolate chips
  • 2 cups milk
  • 1 large egg
  • 3 tablespoons butter, melted
  • 2 teaspoons vanilla extract
  • 1 ripe banana, peeled, 1/2-inch slices
Method
  1. Preheat oven to 375°F and generously spray the inside of a 10-1/2 by 7 inch baking dish with cooking spray and place on a baking sheet.
  2. In a large bowl, mix together the oats, sugar, baking powder, orange zest, Chinese five spice, salt, half the walnuts, half the strawberries and half the chocolate. (Save the other half of strawberries, walnuts and chocolate for the top of the oatmeal). In another large bowl, whisk together the milk, egg, butter and vanilla extract.
  3. Add the oat mixture to prepared baking dish. Arrange the remaining strawberries, walnuts and chocolate on top. Add the banana slices to the top then pour the milk mixture over everything. Gently shimmy/shake the baking dish to help the milk mixture go throughout the oats.
  4. Bake 35 to 40 minutes or until the top is nicely golden brown and the milk mixture has set. For an extra tasty top, sprinkle a tablespoon or so of extra brown sugar on top then place back in the oven under the broiler and broil for 20-30 seconds. Serve warm with an extra sprinkle of sugar or drizzle of maple syrup. (source)

Recipes for smoothies that actually aid in weight loss

PEANUT BUTTER AND BANANA

  • Half of one banana
  • 1/2 cup smooth or crunchy low-fat peanut butter
  • 1/2 cup of non-fat milk
  • 6 ice cubes
  • 1 tablespoon of chocolate whey protein powder
  • Place all of the ingredients into the blender and blend until smooth.

WATERMELON

  • 6 cups of seedless watermelon, chopped
  • 1 cup of lemon sherbet, non-fat milk, or low-fat vanilla yogurt
  • 12 ice cubes
  • Put half the watermelon in the blender and blend until smooth, then add half of the ice and sherbet; blend until smooth. Repeat the process with the rest of the ingredients.

KIWI AND HONEYDEW

  • 2 cups of honeydew, cubed
  • 1 Granny Smith apple, chopped
  • 1 kiwi fruit, peeled and chopped
  • 2 tablespoons of sugar
  • 1 tablespoon of lemon juice
  • 1 cup of ice cubes
  • Place the honeydew, kiwi, apple, sugar, and lemon juice into the blender and blend until it’s smooth, then add the ice cubes and blend until the mixture is slushy.

MANGO SURPRISE

  • 1/4 cup of cubed mangoes
  • 1/4 cup of ripe avocado, mashed
  • 1/2 cup of mango juice
  • 1/4 cup of fat-free vanilla yogurt
  • 1 tablespoon of juice
  • 1 tablespoon of sugar
  • 6 ice cubes
  • Add all the ingredients into the blender and blend until smooth.

APPLE 

  • 1/2 cup of skim milk or soy milk
  • 6 ounces of vanilla yogurt
  • 1 teaspoon of apple pie spice
  • 1 medium-sized, chopped apple
  • 2 tablespoons of cashew butter
  • 6 ice cubes
  • Place all the ingredients in the blender and then blend until smooth; best eaten with a spoon!

These all look so yummy! I think I’ll try the apple one first… or maybe the kiwi? but the mango peach looks so delicious!! oh no, can’t decide!

1 medium garlic clove, minced
1/4 cup basil leaves

extra virgin olive oil
kosher salt
Add the tomatoes (with their juices) to the bowl of a food processor, and pulse several times to crush the tomatoes.  Transfer the tomatoes to a fine-mesh strainer set over a medium bowl and allow to drain 20-30 minutes, stirring occasionally.  Combine the drained tomatoes with sugar, 2 Tablespoons of basil, garlic, and 1/8 teaspoon salt. Meanwhile, preheat the grill to high heat (450-500 degrees) for at least 15-20 minutes.As the tomatoes drain, shape the pizza on a well-floured surface by flattening the dough into an 8-inch disk, pressing to eliminate air pockets.  Stretch the outer edges with flattened fingers while giving quarter turns until the dough is a 12-inch circle.  Allow to sit at room tempeature 10-15 minutes.  Using a pastry brush, oil the dough well. Using a cutting board or pizza peel, transfer pizza, oil-side down, onto the grates of the grill.  Cook 5-10 minutes, or until under-side of dough is golden-brown.  Brush the top with more oil.  Using 2 spatulas, carefully flip the dough.  Working quickly, spread the tomatoes on the now-cooked side, then scatter the cheese evenly on top.  Close the grill cover and continue too cook until the crust is cooked through and the cheese has melted.  Carefully slide pizza onto a platter, and sprinkle with remaining basil, 1 teaspoon of olive oil, and a pinch of kosher or sea salt.  Serve immediately.

Imagine my immense joy at having found recipes straight from Hogwarts, Hogsmeade and Honeydukes. I might have squealed a bit. Bacon Guacamole Grilled Cheese Sandwich
Ingredients
2 slices bacon
2 slices sour dough bread
1 tablespoon butter, room temperature
1/2 cup jack and cheddar cheese, shredded
2 tablespoons guacamole, room temperature
1 tablespoon tortilla chips, crumbled (optional)
Directions
Cook the bacon until crispy and set aside on paper towels to drain.
Butter one side of each slice of bread, sprinkle half of the cheese onto the unbuttered side of one slice of bread followed by the guacamole, bacon, tortilla chips, the remaining cheese and finally top with the remaining slice of bread with the buttered side up.
Grill over medium heat until golden brown and the cheese has melted, about 2-3 minutes per side.
